Cacao from Davao makes waves abroad
Askinosie Chocolate a website based from Missouri and a small batch chocolate manufacturer of chocolate bar features the Philippine version of dark chocolate, a Cacao Davao version that comes in the native name of Tableya.
Tableya comes in various shapes and sizes usually molded round, vacuum sealed, it has a rich dark color appearance, and has a bitter taste, it is served as a breakfast drink, dissolved in boiling water, with added condensed milk, sweetener or milk having a warm aroma anti-oxidant rich cocoa drink.
Tableya known as native Philippine Dark Chocolate is 77% made Davao Cocoa, Askinosie claims and is exported from Puentespina Farms. Charito Puentespina a orchid grower and chocolate maker hailing from Malagos District, Calinan Davao City shares her experiences when she entered the export market back in 2009, shipped several tons of high quality fermented cocoa beans, received a praise worthy remark from Shawn Askinosie a founder of Zingerman’s Deli, describing Davao Cocoa beans as full bodied well-aged wine, she was then introduced to Mars Chocolates who managed and later on helped tie up with Askinosie.
Davao City has luckily made a mark in the world’s best tasting chocolates, we see cocoa growers and chocolate makers strive to do the same soon as the market for cocoa producers is growing.
